The Chef owners of the Celtic Fringe have a love affair with food. We love to make dishes that explode with flavors, including the use of fresh herbs and spices, peppers, exotic ingredients, oils, sauces, fruits, proteins, whatever we can dream up. We experiment all the time. Most of what we try never makes it to the menu because we want your dining experience to be enjoyable, pleasurable and most of all memorable. Many of the dishes we prepare are short-lived, because we also watch and listen very closely to our guests. Just because we enjoy a flavor or combination doesn't mean it works for our guests. When something doesn't work, we pull it from the menu to make room for something new.
