New World Wine

New World wines are those wines produced outside the traditional wine-growing areas of Europe and the Middle East, in particular from Argentina, Australia, Chile, New Zealand, South Africa and the United States. The phrase connotes a distinction between these "New World" wines and those wines produced in "Old World" countries with a long-established history of wine production – most notably, France, Italy, Germany, Spain and Portugal.

North American wine has been produced for over 300 years. Today, wine production is undertaken in all fifty United States, with California producing 89 percent of all US wine.[1] The United States is the fourth-largest wine producing country in the world afterFrance, Italy, and Spain.[2]
The
North American continent is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina. But the wine making industry is based on the cultivation of the European Vitis vinifera, which was introduced by European settlers.[3] With more than 1,100,000 acres (4,500 km2) under vine, the United States is the sixth-most planted country in the world after France, Italy, Spain, China and Turkey.[4]

California wine is wine made in the U.S. state of California. Almost three quarters the size of France, California accounts for nearly 90 percent of American wine production. The production of wine in California alone is one third larger than that of Australia. If California were a separate country, it would be the world's fourth largest wine producer.[2]
The state's
viticultural history dates back to the 18th century when Spanish missionaries planted the first vineyards to produce wine for Mass.
Today there are more than 1,200 wineries in the state, ranging from small boutique wineries to large corporations with distribution around the globe.

Cabernet Sauvignon

Cabernet Sauvignon (French: [kabɛʁnɛ soviˈɲɔ̃]) is one of the world's most widely recognized red wine grape varieties. It is grown in nearly every major wine producing country among a diverse spectrum of climates from Canada's Okanagan Valley to Lebanon's Beqaa Valley. Cabernet Sauvignon became internationally recognized through its prominence in Bordeaux wines where it is often blended with Merlot and Cabernet Franc. From France, the grape spread across Europe and to the New World where it found new homes in places like California's Santa Cruz Mountains, Napa Valley, New Zealand's Hawkes Bay, Australia's Margaret River and Coonawarra regions and Chile's Maipo Valley and Colchagua. For most of the 20th century, it was the world's most widely planted premium red wine grape until it was surpassed by Merlot in the 1990s.

The classic profile of Cabernet Sauvignon tends to be full-bodied wines with high tannins and noticeable acidity that contributes to the wine's aging potential. In cooler climates, Cabernet Sauvignon tends to produce wines with blackcurrant notes that can be accompanied by green bell pepper notes, mint and cedar which will all become more pronounced as the wine ages. In more moderate climates the blackcurrant notes are often seen with black cherry and black olives notes while in very hot climates the current flavors can veer towards the over-ripe and "jammy" side. In parts of Australia, particularly the Coonawarra wine region of South Australia, Cabernet Sauvignon wines tend to have a characteristic eucalyptus or menthol notes.

This exceptionally rich yet balanced Cabernet Sauvignon expresses wonderful dense aromas of ripe burnt early season cherries and scorched earth. The palate showcases classic notes of sweet black cherry, cassis and black raspberry. Tannins are beautifully integrated into this multidimensional, full-bodied yet wonderfully balanced wine. Finish is exceptional and lingering. This wine can certainly be enjoyed now but will only get better with age.

The Indian Wells Cabernet is our warm climate ripe, jammy “New World” style of Cabernet Sauvignon. The wine typifies the Wahluke Slope region with dark fruit aromas and flavors. Syrah added an enhanced richness and concentration to the wine. A warm 2013 growing season resulted in beautifully ripe and balanced Washington Cabs. Nearly 40 percent of the fruit came from vineyards in Washington State’s Wahluke Slope AVA, known for producing concentrated fruit with intense color and flavor.
